Almaco jack confit in butter and lemon

  • Almaco jack fillets
  • Butter to the taste
  • Lemon
  • Rosé wine

Start by salting the almaco jack fillet for 30 minutes in the cold and then going to the skillet to seal with butter. Once sealed, lower the heat and add the almaco jack with lemon and a touch of rosé wine.
For the side, you can use a fresh lettuce salad, tomato and sweet cucumber with a bit of olive oil and vinegar.
