Almaco jack cataplana , 2

  • 2 almaco jack darnes with skin and spine
  • 200/ 300 gr clams
  • 4/5 shelled shrimp and head (this time the client didn’t add it)
  • 2 ripe tomatoes
  • Sliced potatoes
  • 1 large onion
  • 2 garlic cloves
  • 1 small red bell pepper
  • 1 small yellow bell pepper
  • 1 small orange bell pepper 
  • 1 chilli pepper (optional)
  • Parsley and coriander (keep the leaves of the chopped coriander to garnish in the end)
  • Bay 
  • Olive oil to the taste
  • Salt to the taste
  • White wine to the taste

Start by adding the clams in the bottom of the cataplana with the olive oil, chopped garlic cloves, sliced onion and the tomato chopped in cubes. Then, add the potatoes and the sliced bell peppers and, after that, the fish and the shrimp.

Drizzle with a bit of olive oil, salt and white wine, bay, parsley, coriander and chilli pepper. Then, you just have to close the cataplana and let it cook!
